Pimento Cheese Biscuits
As a Southern, biscuits have been a key staple in my life. Each week, my mom would make a batch of these delicious biscuits for us to have with our Sunday night dinner. The light and fluffy texture paired perfectly with my favorite Southern foods like fried chicken, jam and gravy. This biscuit recipe has been a tradition in my family for years, but I decided to kick it up a notch by adding Pimento Chz Club’s Original Pimento Cheese into the mix. Luckily, these biscuits are incredibly easy to make and makes for the perfect side, or snack this Spring.
Ingredients:
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon kosher salt
3/4 teaspoon baking soda
1 (8-ounce) container Original Pimento Chz Club
1/2 cup unsalted butter, frozen
1 1/3 cups buttermilk
Instructions:
Preheat the oven to 450 degrees F.
In a large bowl, combine flour, baking powder, salt, and baking soda.
Add pimento chz to the flour mixture. Using your fingers, break up pimento cheese into small pieces into the flour.
Grate butter using the large holes of a box grater. Stir into the flour mixture.
Add buttermilk and stir using a rubber spatula until a dough just begins to form.
Working on a lightly floured surface, turn dough out and press together. Cut dough in half and stack together. Press together and flatten a little. Cut dough again and stack; repeat procedure 3-4 times. Using a rolling pin, roll the dough into a 1 1/4-inch thickness.
Cut out rounds using a 2-inch biscuit cutter. Re-rolling scraps once.
Place biscuits onto a baking sheet. Place into oven and bake for 14-17 minutes, or until golden brown.
Serve warm and enjoy!
